Mama mia, that’s a spicy meat-a-ball!!!! (JK – These ones aren’t spicy but I like saying that)
Oh do I just love spaghetti and meatballs. And I am not even Italian! But I could eat it every day. Instead of completely cutting out my favorite foods, I just find healthier alternatives. Like switching out spaghetti noodles for spaghetti squash(post coming soon — if you haven’t tried it already, you HAVE TO! It is totally life changing). And I make turkey meatballs. Perfectly portioned, coated in whole wheat bread crumbs, and baked to perfection in a muffin tin, these meatballs could do no wrong.
Preheat your oven to 400ºF. In a bowl, mix together ground turkey, oats, onion, Romano cheese,egg whites, half of the whole wheat bread crumbs, garlic, and parsley.
Divide and roll into 12 round meatballs, and get ready to coat in the other half of the breadcrumbs.
Then, place the meatballs into a Pam-sprayed muffin tin. We will bake them for about 20 minutes.
Flip ‘em halfway through
These bad boys are juicy, flavorful on the inside, and perfectly crisp on the outside.
Not only do they go well with pasta or spaghetti squash, they are are amazing in salads, wraps or sandwiches!
You’ll need:
- 1 lb lean ground turkey
- 1 cup whole wheat bread crumbs, divided into 1/2 cup and 1/2 cup
- 1/3 cup old fashioned oats
- 1 Tbsp parsley
- 1 clove garlic
- 1/3 cup onion
- 1 Tbsp Worcestershire
- 1/3 cup Romano or Parmesan cheese, shredded
- 2 egg whites
- PAM spray
Directions
- Preheat oven to 400ºF
- Mix together ground turkey, oats, cheese, onion, garlic, egg whites, parsley, 1/2 cup whole wheat breadcrumbs, and Worcestershire sauce.
- Divide and roll into 12 round meatballs
- Coat in remaining 1/2 cup whole wheat bread crumbs
- Spray muffin tin with PAM, and place one meatball in each muffin slot.
- Bake for 20 minutes, or until cooked all the way through, and flip meatballs half way through.
